BRIOCHE BUN MIX 500g

Ingredients needed:

  • 500gm BWY Brioche Bun Mix
  • 165gm eggs
  • 160gm unsalted butter (semi hard)
  • 85gm cold water
  • 8gm instant dry yeast

Method:

  • Pour brioche bun mix, cold water, eggs, yeast and mix for 6 minutes at medium speed. Then, add in butter and mix for 8 minutes until the dough is fully developed.
  • Leave in the chiller at 5°C for 90minutes for bulk fermentation
  • Scale 50gm each dough and rest for 30 minutes at room temperature.
  • Mould as desired and place in a baking mould 
  • Proof for 60 minutes at 30°C 
  • Lastly, egg wash and bake for 12-15 minutes is preheated oven at 180°C

  • Sourdough
  • Salt
  • Wheat Gluten
  • Bread Improver
  • Bread Softner
