BRIOCHE BUN MIX 500g
Ingredients needed:
- 500gm BWY Brioche Bun Mix
- 165gm eggs
- 160gm unsalted butter (semi hard)
- 85gm cold water
- 8gm instant dry yeast
Method:
- Pour brioche bun mix, cold water, eggs, yeast and mix for 6 minutes at medium speed. Then, add in butter and mix for 8 minutes until the dough is fully developed.
- Leave in the chiller at 5°C for 90minutes for bulk fermentation
- Scale 50gm each dough and rest for 30 minutes at room temperature.
- Mould as desired and place in a baking mould
- Proof for 60 minutes at 30°C
- Lastly, egg wash and bake for 12-15 minutes is preheated oven at 180°C
