Glucono Delta Lactone also known as gluconolactone, is a food additive used as a sequestrant(a preservative that prevents fat oxidation in food), an acidifier, or a curing, pickling, or leavening agent in the food industry. It is a lactone of d-gluconic acid. Pure GDL is a white, odourless crystalline powder.
