- 1pack BWY Snow Skin Mooncake Mix
- 60gm shortening
- 260ml cold water
- 45gm koh fun (for dusting)
- 1kg lotus paste
- 100gm melon seeds (toasted)
Method:
- For skin, mix all ingredients (except Koh Fun, lotus paste and melon seeds) until well combined, cover the dough with wet cloth and leave aside for 20 minutes. Weight the dough 35gm each.
- Add in toasted melon seeds into lotus paste, mix until well blended. Divide the filling to 65gm each and roll them into a round shape.
- Take one dough, flatten with your palm and roll it out into circle. Place one filling in the middle and wrap it with dough.
- Dust it with Koh Fun and put into the mooncake mould and press, remove from the mould.
- Store mooncakes in air-tight container and chill in fridge for 2 hours.
